French Pastries 101: Choux à la vanille

chou a la vanille

A Parisian pastry chef etoilé (he won the “Best Artisan Patissier in France” award) transplanted himself to Burgundy and just recently opened up shop! (more about him later when I have more info :) )

He created this lovely and delicious pastry, chou à la vanille, a pastry puff filled with vanilla cream (you can see the vanilla beans inside) and topped with a glaze. The colorful, chocolate-covered rice puffs sprinkled on top adds further visual and textural dimensions to the whole pastry. C’est a dire, it’s pretty and yummy.

Oki… Oki.. now you got my mouth watering.. To bad the boulanger is ferme’ right now… Hey.. I dare you to come over to my blog and look at my pastry shots, too… People say they gain weight JUST by looking at the pics… I just wanted to say hi and I just LOVE this pic.. what are those coloured things on top? I have NEVER seen that.. But today, in Paris on the C-E … I walked into Lauderie and looked (drooled over) their yummy pastry section.. Needless to say, I walked out empty-handed!
